Upma is a traditional south Indian recipe made using Rava aka semolina aka suji. Making veg upma involves roasting Rava in ghee, tempering veggies with herbs and spices, and gradually adding roasted Rava till finally cooked.
Ingredients
- Semolina – 100 gm
- Cooking Oil – 50 ml
- Black Mustard – 1 tsp
- Cumin Seeds – 1 tsp
- Urad Dal – 1 tsp
- Curry Leaves – 8-10 pcs
- Peanuts – 1 tbsp
- Green Chili – 1 tbsp (Chopped)
- Cashews – 1 tbsp
- Onion – 1/2 pcs (Medium Size) (Chopped)
- Carrot – 3 tbsp (Chopped)
- Green Peas – 2 tbsp
- Salt – 1 tbsp
- Tomato – 1 pcs (Small Size) (Chopped)
- Roasted Gram – 1 tbsp
- Water – 1.5 glass
Instructions
- Heat a nonstick pan/kadhai. Add rava & roast on low-medium flame till aromatic.
- Heat cooking oil in another pan/kadhai. Add black mustard, cumin seeds, urad dal, curry leaves, peanuts, green chili & cashews. Saute them.
- Now add chopped onion, carrot, green peas and salt. Mix well and saute again.
- Add chopped tomato & roasted gram. Mix well and saute again.
- Add water, mix well, cover the lid and cook for 10-12 minutes.
- Finally, add the roasted rava in batches while mixing it simultaneously. Cook till water evaporates.
- Veg rava upma is ready. Serve hot with tea or coffee.
